Vegan Loaded Sweet Potatoes

This meal is light on ingredients but heavy on flavor. It’s also easy to prepare large amounts ahead of time and reheat. Since convenience is king, and especially helpful when creating a new healthy lifestyle, give these a try. You don’t even have to be vegan to enjoy them!



1 medium sweet potato
1/4 C black beans, unsalted
1 C fresh spinach
2 green onions
2 Tbsp guacamole
2 Tbsp salsa
coconut oil

Bake sweet potato at 400 degrees for 45-55 minutes, until soft
Drain black beans
Saute spinach and black beans in coconut oil until spinach is lightly wilted
Remove spinach and black beans from pan
Cut baked potato in half and top with spinach and bean mixture
Slice green onions and sprinkle on top
Finally, add guacamole and salsa to top

Sweet potatoes are full of vitamin A, and the guacamole and black beans provide a healthy does of protein, fat and fiber in this meal.
