Tasty Tater Salad

It’s always nice to try a new healthy side dish during the holidays. If you’ve been tasked with bringing something along for a Memorial Day cookout or other get-together, this is a tasty, healthy and easy recipe that your friends and family will be excited to try.

Ingredients
1.5 lbs white potatoes
1.5 lbs sweet potatoes
1 large red onion, cut into thick strips
3 slices of bacon, cooked and cut into bite-sized pieces
1/4 C coconut oil, melted
1 Tbsp red wine vinegar
1/4 tsp cumin seed
1 Tbsp oregano leaves
1 bunch of fresh cilantro, leaves only, chopped
Salt and pepper to taste

Directions

  • Cook potatoes in boiling water until tender. Drain, allow to cool and then quarter. Set aside.
  • Grill onion slices until lightly caramelized.
  • Toast cumin seeds in medium skillet until fragrant.
  • Add oregano and continue to toast about 20 seconds. Make sure you don’t allow them to burn.
  • Remove spices from heat and transfer toasted spices into large bowl.
  • In a large bowl with toasted spices, add oil, vinegar, salt and pepper and whisk together to blend. Add potatoes, onions, bacon and cilantro; toss lightly to coat.
