It’s always nice to try a new healthy side dish during the holidays. If you’ve been tasked with bringing something along for a Memorial Day cookout or other get-together, this is a tasty, healthy and easy recipe that your friends and family will be excited to try.
1.5 lbs white potatoes
1.5 lbs sweet potatoes
1 large red onion, cut into thick strips
3 slices of bacon, cooked and cut into bite-sized pieces
1/4 C coconut oil, melted
1 Tbsp red wine vinegar
1/4 tsp cumin seed
1 Tbsp oregano leaves
1 bunch of fresh cilantro, leaves only, chopped
Salt and pepper to taste
- Cook potatoes in boiling water until tender. Drain, allow to cool and then quarter. Set aside.
Grill onion slices until lightly caramelized.
Toast cumin seeds in medium skillet until fragrant.
Add oregano and continue to toast about 20 seconds. Make sure you don’t allow them to burn.
Remove spices from heat and transfer toasted spices into large bowl.
In a large bowl with toasted spices, add oil, vinegar, salt and pepper and whisk together to blend. Add potatoes, onions, bacon and cilantro; toss lightly to coat.
