I don’t know about you, but I love easy breakfast recipes. If there’s anything to help get me out the door a little faster, I’ll give it a try. This recipe can be partially prepared before your breakfast rush, and it’s packed with protein, healthy fats, fiber-rich carbohydrates and nutrient-dense veggies! What more can you ask for?
Ingredients for 1 serving
1 egg white
1 C spinach
2 green onions
*1 end of a cooked sweet potato- see note
Coconut oil, ghee or grass-fed butter for cooking
Sea salt and pepper to taste
*The night before, cook a large sweet potato at 400 degrees for 40-45 minutes, until it’s cooked through but not completely soft. Cut off the rough knob at the end and throw away. From that point, cut into the potato so you are cutting off a round piece that’s about 1.5 inches thick. Slice that into smaller bite-sized pieces.
Coat a medium-sized pan with your cooking oil of choice
Add sweet potato and saute’ on medium-high for 2 minutes
Add green onions and spinach, cook until close to wilting
Add eggs and egg white
Break the yokes so they’re distributed around the pan
Continue mixing all ingredients together, except for salt and pepper
Remove from pan when eggs are cooked through
Top with salt and pepper
You can use the rest of the sweet potato throughout the week to make the same meal, or enjoy as a side with lunch or dinner. You can use the spinach and green onions in stir fries or salads. This is a great meal for stretching your budget!
