Paleo Asian Salad

This salad is fresh and full of flavor! You’ll be getting a great dose of vegetables and a sweet little something thanks to the flavor from the clementines. You can also prepare a large portion at the beginning of the week and portion out as needed.

Salad Ingredients

2 C baby romaine
1/2 C green cabbage, shredded
1/4 C shredded carrots
1 green onion, sliced thin
1 Tbsp of cilantro leaves, diced thin
4 oz grilled chicken, shredded or chopped into bite-sized pieces
1 clementine, peeled with pieces separated

Dressing Ingredients
1 Tbsp smooth almond butter
juice of 1/2 of 1 lime
1 Tbsp coconut aminos

Directions
Mix all salad ingredients together in a large bowl and set aside
Mix all dressing ingredients together in small bowl
Pour dressing mixture over salad and mix well
Enjoy!
