Flourless Chocolate Chip Cookies

As always my sweet tooth rears its ugly head around the first of the month!

So to satisfy my cravings and not totally sabotage my diet, I found a recipe for oatmeal cookies and turned them into a healthier version.

Ingredients

1/2 cup unsalted softened butter

1 cup almond butter

3/4 cup coconut sugar

1/3 cup maple syrup

2 large organic eggs

1 tsp pure vanilla

3 cups gluten free oats

1 1/2 tsp baking soda

1 cup dark chocolate baking chips ( I use Lily’s dark chocolate)

1/2 cup chopped walnuts (optional)

1/2 cup dried cranberries (optional)

Instructions

Preheat oven to 375 F

In a bowl, beat butter, almond butter, coconut sugar, and maple syrup until smooth. Add vanilla and eggs and beat . Add oats and baking soda use low speed until combined. Stir in chocolate chips and any other optional ingredients you want to add.

Drop 2 Tbsp size portions of cookie dough onto lightly greased baking sheet about 2 inches apart. Take a spoon and slightly flatten each drop of dough

Bake for 10-12 minutes, they will be a golden brown when done.

Let cool for 8 minutes and enjoy!

Gluten Free Coffee Cake

It has been a few weeks since I have blogged , my mom passed away and I just have not wanted to do much of anything except Bake. It feeds my soul, warms my house and heart, and reminds me of my mom. Because I absolutely love coffee and cake I thought I would whip up a healthy version of an old classic.

Ingredients

2 Tbsp almond flour

2 Tbsp Mocha IsaLean (optional, I added it of course!)

1/4 tsp baking powder

Pinch of sea salt

1Tbsp coconut sugar

2 Tbsp water

2 tsp coconut oil

1/4 tsp pure vanilla extract

Streusel

2 tsp coconut sugar

1tsp applesauce

1/8 tsp cinnamon

Instructions

Pre Heat oven to 350 degrees

Combine dry ingredients for batter and mix, add wet ingredients for batter and mix

In a small bowl combine streusel ingredients and mix

Add batter to mug, ramekins muffin pan 3/4 full them add streusel

Bake 12-15 minutes or until pick comes out clean

Let cool

Healthy icing (optional, I added it)

1 cup powdered coconut sugar (use a high speed blender put coconut sugar in and blend until powder)

1 1/2 Tbsp almond milk

1/2 tsp pure vanilla extract

Breakfast Cranberry Oat Muffins

Who doesn’t need easy in their lives? I find that the easier it is to make a meal , the easier it is to stick to a healthier lifestyle.

I found a recipe for these and tweaked it to make it 7 ingredients and gluten free!

INGREDIENTS

2.5 cups gluten free rolled oates

2 ripe bananas

1/2 tsp sea salt

1/2 Tbsp pure maple syrup

1/2 cup organic dried cranberries

2 Tbsp applesauce

1 tsp pure vanilla extract

INSTRUCTIONS

Preheat oven to 380F

use cupcake liners in tin

Combine all dry ingredients in mixing bowl, stir well

In separate bowl mash bananas, and add liquid ingredients whisk

Combine wet ingredients into dry mix well, pour batter into liners and bake for 25 minutes

Cool overnight or refrigerate

Enjoy!
