No Bake Gluten Free Cookie Dough Bars

Looking for a gluten free treat to satisfy the cookie monster that still lives inside of you? Good news- these bars will do the trick! They’re simple to make, and you can find the few ingredients required at most grocery stores.

Ingredients
1/2 C butter, softened
2 tsp vanilla extract
3/4 C creamy almond butter- you could also use peanut butter
1 1/2 C coconut sugar
2 1/2 C powdered sugar
1 C gluten free chocolate chips

Directions
Whisk almond butter, butter, vanilla and sugar together in a large bowl
Add powdered sugar slowly and stir until well combined
Fold in chocolate chips
Grease a 6×6 pan with a little bit of extra butter, or line with parchment paper to prevent sticking
Press the mixture into the pan
Place in refrigerator and let chill for 3 hours
