Lazy Lentil Tacos- Vegetarian

Have you ever been to a restaurant with a theme night or weekly specials? Do you have certain foods on certain nights at your house? If not, these lazy lentil tacos could be just what you need.


How about taco Tuesdays? Theme nights like this help you plan ahead and can actually give your kids something to look forward to. If your kids are old enough, set up stations so they can piece together their own tacos. Make a simple large salad to have with it for extra servings of vegetables. Bonus: You can use the lentil mixture over greens for a salad later in the week!


2 C of lentils (your choice of color), cooked- if you purchase them in a can, be sure to drain excess salt off and let them dry a bit
1 Tbsp extra virgin olive oil
1 C yellow onion, chopped
1 garlic clove, minced
1/4 C cilantro, chopped
1/2 C salsa
2 Tbsp chili powder
1 Tbsp ground cumin
Taco shells of choice- hard or soft organic corn tortillas work well

*Optional toppings- shredded lettuce, chopped tomatoes, cheese, avocado/guacamole

In a large pan, saute garlic and onions in extra virgin olive oil until translucent
Add in lentils, cilantro, salsa and spices
Cook until heated and well combined
Warm taco shells according to directions. If using soft tortillas, heat in a separate pan. You can use a small amount of oil or just warm them alone on each side.
Serve lentil mixture with shells and set up stations with toppings of your choice.
