Lazy Day Latkes

If you’re getting tired of your usual healthy breakfasts, you’re going to be excited to try these latkes. Of course, they don’t just have to be for breakfast; you’ll see that they’re an easy way to get in some extra veggies first thing in the morning though! Best of all, you can make them several different ways so you’ll never get bored.

Zucchini Latkes
2 C green zucchini squash, shredded
4 green onions, sliced thin
1 egg, beaten
1 Tbsp coconut flour
1/2 tsp garlic powder
1/2 tsp dried parsley
sea salt and pepper to taste
1 tbsp of coconut oil, butter or ghee for cooking

Directions
After you’ve shredded your zucchini, place it in a paper towel to squeeze some of the water out
Dump zucchini, onions, and egg in a medium bowl
In a smaller bowl, combine coconut flour and spices
Add flour and spice mix to vegetable and egg mix
Stir until well combined
Turn burner to medium heat and melt your cooking oil of choice in pan
Divide the mixture and cook approximately 1/4 C at a time
As the mixture starts to cook, be sure to flatten it
Flip to cook other side

Sweet Potato Latkes
2 C uncooked sweet potato, shredded
1 egg, beaten
1 Tbsp coconut flour
1/4 tsp cinnamon
sea salt to taste
1 tbsp of coconut oil, butter or ghee for cooking

Directions
After you’ve shredded your sweet potato
Dump sweet potato and egg in a medium bowl
In a smaller bowl, combine coconut flour and cinnamon
Add flour and cinnamon mix to sweet potato and egg mix
Stir until well combined
Turn burner to medium heat and melt your cooking oil of choice in pan
Divide the mixture and cook approximately 1/4 C at a time
As the mixture starts to cook, be sure to flatten it
Flip to cook other side

Don’t be afraid to experiment with different vegetables and spices!
