Gluten Free Coffee Cake

It has been a few weeks since I have blogged , my mom passed away and I just have not wanted to do much of anything except Bake. It feeds my soul, warms my house and heart, and reminds me of my mom. Because I absolutely love coffee and cake I thought I would whip up a healthy version of an old classic.


2 Tbsp almond flour

2 Tbsp Mocha IsaLean (optional, I added it of course!)

1/4 tsp baking powder

Pinch of sea salt

1Tbsp coconut sugar

2 Tbsp water

2 tsp coconut oil

1/4 tsp pure vanilla extract


2 tsp coconut sugar

1tsp applesauce

1/8 tsp cinnamon


Pre Heat oven to 350 degrees

Combine dry ingredients for batter and mix, add wet ingredients for batter and mix

In a small bowl combine streusel ingredients and mix

Add batter to mug, ramekins muffin pan 3/4 full them add streusel

Bake 12-15 minutes or until pick comes out clean

Let cool

Healthy icing (optional, I added it)

1 cup powdered coconut sugar (use a high speed blender put coconut sugar in and blend until powder)

1 1/2 Tbsp almond milk

1/2 tsp pure vanilla extract

Mix and apply to top of coffee cakeIMG_2306IMG_2307
