Gluten Free Chocolate Chip Cookie Bars

Last week I took a Trip all by myself to Vegas. Purpose of this trip was to bake some healthy yummy treats in my parents beautiful kitchen, and then share these treats with my son and his fellow firefighters. They were a hit and It was fun hanging out with these guys!




1/4 cup organic apple sauce

1 cup cashew butter (or any nut butter)

1tsp pure vanilla extract

1 1/2 tsp baking soda

1/8 tsp sea salt

1/4 cup almond flour

2/3 cup coconut sugar

1/4 cup gluten free chocolate chipsIMG_0223


Preheat oven to 350F

Grease 8 inch baking pan with coconut oil

In mixing bowl combine almond butter, apple sauce, and vanilla extract stir well

In separate mixing bowl combine all dry ingredients and chocolate chips

Combine wet ingredients to dry and stir well , if it is to dry add a tsp of water or almond milk

Transfer gooey batter into pan distribute evenly with spatula

Bake 10 minutes

Let them cool down for 20 minutes then put into fridge over night.
