Easy Easter Side Dishes

Easter is right around the corner, but it’s no reason to fall off the wagon. Start your day with a great workout, skip the chocolate bunnies and try some of these tasty dishes! Your guests will never even know they’re eating healthy.

Easy roasted red potatoes

Serves 6

Ingredients
2 lbs of small red potatoes, halfed
2 Tbsp of melted coconut oil
1.5 tsp dried thyme
1.5 tsp dried rosemary
1.5 tsp garlic powder
1 tsp sea salt
1 tsp black pepper

Directions
Pre-heat oven to 400 degrees F
Line a baking sheet with parchment paper
Place potatoes in a large bowl and add coconut oil
Stir to coat- Make sure potatoes are room temp or coconut oil will harden
Add spices and stir again to coat evenly
Spread potatoes on baking sheet
Bake for 12 minutes, then flip
Bake for another 10-12 minutes until potatoes are soft

Brussels sprouts salad with lemon

Serves 6

Ingredients
1 lb of brussels sprouts
2 cloves of garlic, minced
Juice of 1 small lemon
1/8 C extra virgin olive oil
1 Tbsp poppy seeds
sea salt and black pepper to taste

Directions
Remove brussels sprouts stems, then slice brussels very thinly or put them in a food processor to shred
Place brussels sprouts in a large bowl
In a smaller bowl, mix remaining ingredients except for salt, pepper and poppy seeds
Stir ingredients in small bowl to mix well
Pour ingredients in small bowl over brussels and stir to coat evenly
Place in fridge to let flavors settle in
Add salt and pepper to taste
Add poppy seeds and stir to spread evenly

Balsamic asparagus

Serves 6

Ingredients
2 lb of green asparagus
1/4C balsamic vinegar

Directions
Pre-heat oven to 400 degrees F
Line a baking sheet with parchment paper
Cut the hard ends off of asparagus and evenly space out on baking pan
Pour balsamic vinegar over asparagus evenly
Use your hands to roll asparagus back and forth so it’s better coated
Bake for 12 minutes
Remove from oven to roll and insure even cooking
Bake another 12 minutes
