Vegan Chocolate Mousse

When you’re in the mood for a simple and tasty chocolate treat, this dessert will hit the spot! With a few simple ingredients and a little bit of prep time, you’ll have a dessert you’re proud to share with friends and family (if you don’t eat it all yourself).

1 1/2 C coconut cream

Tip: Buy 2 cans of full fat coconut milk and place them in the fridge overnight. In the morning, you can scrape the cream from the top of each can. Use remaining coconut milk for baking, stir fries or soups

1/2 C cocoa powder
1/4 C maple syrup
1/4 C chia seeds
1/4 C Enjoy Life chocolate chips

In a large bowl, whisk all ingredients except chocolate chips together
Store in fridge covered for at least 3 hours
Spoon into serving bowls and top with chocolate chips. You can also layer chocolate chips.
Note: You could also whip any extra coconut cream with a tsp of vanilla to use for whip cream. You may want to thin it with regular coconut milk or almond milk.
