Sweet and Spicy Tacos (Vegetarian)

Summer is just around the corner! As the weather starts to warm up, it’s fun to play around with more cooling ingredients that satisfy your taste buds and your tummy. This taco recipe is a perfect combination of a little salty and sweet. It’s full of flavor and full of nutrients. Best of all, you can mix, match and substitute some ingredients to adjust it as you wish. Did I mention there’s not much cooking involved either? Let’s get to it!

Ingredients for 6-8 tacos


1 C black beans, drained and rinsed
1 mango, cut into bite-sized pices
1/2 C chopped red onion
1/2 red bell pepper, chopped
juice of 1lime
1 handful of cilantro, chopped
1 avocado, cut into bite-sized pieces
sea salt to taste
6-8 corn tortillas- you could also substitute whole wheat or spinach tortillas, or just make them into lettuce wraps by using romaine lettuce leaves



Mix all ingredients but lime juice together in a large bowl until well combined.
Add lime juice and stir to coat.
Warm your tortillas (optional)
Scoop mixture into tortillas or lettuce leaves and enjoy!

More ideas

  • Add thinly sliced spinach, cabbage, or shredded carrots for more veggies
  • Try swapping pineapple for mango- you’ll need about 3/4C diced
  • Use chickpeas in place of black beans
  • Add a small amount of extra virgin olive oil to the mix for added healthy fats
  • Save leftovers to have over baby romaine as a salad the next day
  • Add tilapia or shredded chicken (no longer vegetarian)

5 Steps to Quick Confidence

Some people are naturally more confident than others, but we all get knocked down every now and then. How do you get back up? Or, how do you get started? Here are a few tips to help boost your confidence and accomplish everything you’re meant to.

1. Remember that you’re unique
In a society that tells us looking and acting a certain way is required to succeed, it’s easy to forget how unique you are. Take a moment to stop and think. What makes you different? What are you really good at? What do you enjoy? Write down a list and don’t forget about it! Tape it somewhere you’ll see it each day- maybe your bathroom mirror or refrigerator. It should serve as a reminder that you have a lot to offer this world, and whatever that may be is completely different than what someone else has to offer.

2. Accept your weaknesses
No one is good at everything. As you’re writing down what you’re good at, write down what you’re not so good at. Don’t be afraid to do this. Recognizing your weaknesses takes away some of their power. You can improve almost anything with a little effort, but dwelling on your weaknesses will only decrease your self confidence. Accept them, ask for help or support if you need it, and go from there.

3. Write and say positive affirmations
It may sound cheesy, but affirmations are powerful. Write down 5-10 affirmations that you can say every day upon waking and every night before bed. Look in the mirror as you say them to yourself. Here are a few ideas to get you started:

  • I am a confident person and I have a lot to offer this world.
  • I am deserving of love, success and happiness.
  • I can make a difference in this world.

When you repeatedly say these things, you will actually begin to believe them. If you don’t enjoy looking in the mirror, close your eyes and sit in a quiet place to say these each day.

4. Challenge yourself
Sometimes you have to shake things up a little to gain some confidence. If you’ve been doing the same job in the same place with the same people for a long time, you may have forgotten that you’re capable of overcoming adversity and conquering a challenge. Try something new- maybe a new fitness class, an art class or a trip somewhere you’ve never been. Take a friend with you if you’re a little nervous. Whatever you decide on, remember to say your positive affirmations before you go! Let them sink in and watch what happens.

5. Pick the right people
If you want to get somewhere new or achieve a new goal, you need to surround yourself with people who are doing those things and working towards the same goals. You need to be inspired and you need to see people who have accomplished what you want to. Surround yourself with inspirational and positive people. Find a mentor. Distance yourself from people who hold you back or only have negative words to offer.

Vegan Stir Fry



1 Head Of Cauliflower
Handful Of Fresh Basil
Fresh minced Garlic
1 Tsp Organic Coconut Oil
2 TBSP Liquid Coconut Aminos


Put cauliflower florets, basil, and garlic in high speed blender ( I use a Vita Mix) pulse until minced.
in frying pan melt coconut oil, then add cauliflower and aminos
cook for 10 minutes on medium heat.
Serve with a side salad, and sauteed mushrooms
