When it comes to nutrition I would like to think I know whats best for me, BUT I’m always up for trying new things. So after hearing so much about The Paleo way of eating, I decided to give it a try. I’m going to school at Integrative Nutrition, and I’m learning so much about different diets. After researching The Paleo diet I realized it is very similar to The Zone Diet. Your eating lots of veggies and fruit, grass feed animal protein, sweet potatoes, nuts , healthy oils, nut flour, maple syrup, organic honey,and some other healthy condiments Not on the edible list, diary,grains, legumes, processed foods, sugar. It seems doable, and after reading The Paleo Diet,and It Starts With Food, there is plenty of research backing up what this way of eating does for the body. So I figure if i could get rid of my joint pain and inflammation by eating this way it would be worth its weight in gold! I’m only 5 days into this new way of eating and although I still have inflammation, I feel like its less, I’m down 4 pounds, but I was up 10 due to my summer splurging. I’ve committed to 30 days and if my inflammation gets better, I will be staying with this way of eating
INGREDIENTS FOR WAFFLES makes 2
1/3 tsp vanilla extract
1/4 cup coconut flour
1 tsp cinnamon
2 Tbsp coconut oil
1/3 tsp baking powder
1/3 tsp baking soda
blend all ingredients and pour into waffle iron or skillet.
INGREDIENTS FOR JAM
3 cups blackberries
3 TBSP organic honey or coconut nectar
1 TBSP fresh lemon juice
2 TBSP chia seeds
Put berries, honey and lemon juice in a pan over medium for 5 min
transfer over to blender. blend for 5 seconds, return to pan add chia seeds for 5 min.
Let cool for 10 minutes before transferring to air tight jar.
Refrigerate last up to 2 weeks.
